Looks great Mac!

What’s in the stuffing?

Old family recipe.  Italian bread crumbs, ground beef, finely chopped garlic, Parmesan cheese, mozzarella cheese, some secret herbs and spices, and eggs to bind things.

Here’s a pic at the half way point.

Actually, the recipe calls for group pork or sausage but I have a ton of ground beef in my freezer that I need to use up.

Pans are tilted to drain off the grease.

Thanks for sharing Mac. Have only filled jalapeños with cream cheese and wrapped in bacon. Going to have to dabble a bit

Looking good there guys. I'm going into withdrawal this year. Most of my smokes are on weekends at camp. This year only one. The owner added a pile of new sites here without upgrading the power so now we don't have enough juice. I won't run my AC on 80 volts in the camper nor will i run my electric smoker and fry the $220.00 controller.
The only good thing is they are doing a major upgrade during the off season so next year things should be good.
I do have 30 pounds of Canadian bacon curing to smoke at home in a couple weeks.

mac, do you stir those beans and things in the smoker?

 i have a friend that does hog roasts and does his krout in there with the smoke.  i could just eat that krout screw the hog!  i can only imagine how good those beans are there! dang :P

Yup
Stir every 30-45 minutes.
Especially the beans
It helps them to thicken and also get far more smoke into them.
However, it does tend to dry out the Mac-n-cheese, which I like.
Most people don’t want it as dry as mine is.
