and pickled crappie came out great only different i did was the hot pepper and after salt brine"cooking" i didnt put in jars with pickle put fish after washing in a big container with onions and pickle brine for couple days so i can stir and get good absorsion and ill pack n jars again(acctualy had in pints first and didnt look like enough liquid in jar after filling them and using a skewer to get liquid in so went other direction) but it is real good ,probably jar up tommorro
dinner tonight was some of the many perogies i made and froze

Nope no garlic.
Tell the truth, I'm not really convinced to add hot peppers. It's so mild and tasty as is.

But.....I'll try anything once.

your right rg it is great just the way it is,just wanted to ad some heat,i was eating some working on a bridge today in palmyra whole crew loved it with the kick as far as garlic ....na ....dont get me wrong i love garlic but i have found if you dont sweat garlic or heat up really dont ad flavor ,just my finding got to release its oil but fish is great!!!!!!!!!!!

I agree on the garlic. I have about a half jar left. Think I'll toss in some of the dried hot pepper mix I made last fall.

Tonight it was French Pot Roast Chicken.
Browned in olive oil with salt and pepper

Add in potatoes, celery, carrots, a pile of garlic cloves, sprig of rosemary, thyme and a whole sliced lemon.

Cook in Dutch oven at 350 for a couple hours.




I made a dressing from leftover homemade bread for a side.

Super tasty. There's other steps if anyone is interested.

Looks fantastic Dom.
How good is it to be able to cook a meal for yourself. I see these stupid commercials for the 20 somethings who can't find their way to the grocery store, buying some internet service that serves them up dinner in a cup.....just pull it from the freezer and toss it in the blender.

Am I wrong... or is this just not right?

Got home this afternoon and made my Bride of 49 years a really nice Valentine's Day meal. Scallops and shrimp with Alfredo and angel hair pasta nests...and a side of asparagus.









Not cardiologist approved......but hell.....twice a year ain't gonna kill us.

We get to smell it simmering all day👍 We'll cook it today and can it up tomorrow.

and rg your right on young generation not being able to cook
my boys are 34 29 and 25 but lucky for me they grew up on all homemade food as i was years ago and they caught the cooking "bug" i guess there always sending me pics of there meals they created the oldest has been allover the world for 8 years thanks to our navy and used to tell me all the foods he ate and said his favorite meat he ever ate was horse ! i know frowned on in our country but said over seas they eat every thing and youngest boy would never even use franks red hot when he lived home but he has lived in austin texas about 5 years now and cooks with all kinds of chili peppers even GHOAST chilis ,those are a bit much for me though
