Cant say I have either  ???
Not too sure I would want to. Seems there would be a lot of work to bone one out for the bit of clean flesh you could get .

Yeah, once you've caught the gar, you take out the hook and....now this next part is crucial...............throw the dang thing back!

1. Fillet the gar in normal fashion.  Don't worry about the bones, we'll get to that
2. Attach the fillets to water soaked cedar planks like you're making salmon
3. Place the planks over a medium fire or at an angle near a hot campfire
4. Cook gar until well done, you can baste with butter at this point if you wish
5. Remove fillets from planks
6. Discard gar
7. Eat the planks

First of all the roe is deadly.........

OK, first fillet, skin, grind the meat........season to your taste and cook like a crab cake.
