ez fish recipies

i just fillet my panfish, then cut them in scallop size pieces. I use a large saucepan,fill it half full with oil [ peanut oil works great ] and get it as hot as you can. Test it with drops of water for hotness. I put the wet fillets in a shaker bag with just flour and or your choice of spices,shake bag till fish are coated. Put a generous amount of fillets in the pan and in a few mins, they rise to the top just like fries no need to flip them. I mix up liberal parts of ketchup,raw horseradish and french salad dressing [ any brand works ],stir them up and use the mixture for a dipping sauce. My mouth is already watering yum yum. Hope this works for you. When im at camp im usually cooking fish for at least 5 guys so ill use up to 3 saucepans at once fast and oooooooooo so goodddddddddd!!!!!!!!!!!!!!!!

BigDave- I'm thinking you need to cut down on the peanut oil, or something!

My favorite is trout fillets in foil with onions, lemon, and good herb on the grill :P
