Hey all.

Did someone on here post a recipe for smoked Mac and Cheese? I thought I saw a recipe on here but I cannot find it with the search function and I am looking to make some myself for a work event. If not, no biggy I can figure it out.

I can give you a recipe for the "Heart Stopping Mac And Cheese". Did it smoked last year. It went really fast.

Tonight it was a "Refrigerator Omlet".
Ham, spinach, jalapeño jack, Orange bell pepper and onion.

With home made salsa on top.

And peanut butter, oatmeal , chocolate chip cookies (and bourbon) for desert. ( Desert compliments of my wonderful Bride).

I do my 12,000 steps at work. Nice getting paid to get my exercise. Anyway, I eat easy proportions and save some for tomorrow's lunch.

My recipe is basically the same as his.
Start with a roux.i like to sauté some diced onions and jalapeño peppers in the butter before adding the flour.

I use half and half rather than heavy cream and I prefer extra sharp cheddar, jalapeño Jack, shredded Asiago, ,Parmesan and a block of cream cheese for the sauce. Although, I like his idea of adding sour cream and mayo to the mix.

Rotini works better than elbow macaroni. More surface to pick up the cheese sauce.

I top mine with bacon crumbles and seasoned Italian bread crumbs.

Cast iron skillet is definitely the way to go. 

350* for about an hour.

Super delicious but, don't make it too often. It's a heart attack waiting to happen. Malcom looks like he eats it for breakfast every day.

Made applesauce Monday..well, my Bride did anyway. Canned it up yesterday.

Did a few gift jars of Bourbon/Jalapeño applesauce too.


Everyone who's tried the Bourbon /Jalapeño sauce has asked for more.

Im getting ready to grind 50lbs of venison and bacon for burgers and venison treats...    ;D

Ground some burgers and another 25lbs left for vennie sticks..
Pre freeze my burgers before I vacuum seal them..
