9th anniversary for Lisa and I so I whipped up some crab cakes from about 2 pounds of snow crab legs, pan seared some grass fed sirloin, and tried white asparagus for the first time. Man it was good. Sweet and no bitterness after. The crab cakes were outstanding.
Steam 2 lbs snow crab
Let the wife shell them because I'm not to be trusted
Really fine dice of a medium bell pepper
Same with a small sweet onion and 6 cloves of garlic.
Sautee all that over high heat till brown with a small amount of XVOO.
Take off the heat and fold in 1/4 stick of butter so it dosent break.
Whip up 2 eggs. Add the veggies and egg to the crab and use whatever breadcrumb you like, i used ritz crackers use just enough to bind.
I got 6 cakes about the same size.
Get a pan good and hot and use some cooking spray directly before you add the cakes. 1 min on each side to brown, then cover on a low heat for another 5 mins
If we dont devour them tomorrow they freeze well.
