Title: Baked Rockfish Parmesan

For non-Marylanders, rockfish are striped bass  ;D  I took a recipe that I used to use which is very good, but modified it to what I had on hand so I didn't have to go shopping, and it turned out even better...in fact, awesome.  You can do this with any good tasting fish when broiled....and it's easy!

Ingredients:
Fish Filets, I used about 2 pounds of filets, you can modify the rest as needed
Olive oil
Sargento Bistro Blend Italian Pasta Shredded Cheese
Cardini's Caesar Dressing (regular)

Instructions:
1)  Preheat over to 450

2)  In a bowl, mix the entire bag of cheese with the Cardini's dressing

3)  Spread a thin layer of olive oil on a baking pan, not too much because this recipe will be juicy

4)  Arrange filets on oiled pan

5)  Spread cheese/dressing mix all over the surface of the filets (I used all of it)

6)  Bake for 20 minutes or until fish is flaky

7)  Go stuff yourself!   ;D  Yum!

I'd bet this would be awesome with crappie, founder, walleye...let me know!

I will be cooking another batch next week, and will get a picture.

Sounds yummy Kevin. :w00t:

Try this next time you get some chunky fillets.
Brush with garlic olive oil
hit it with fresh ground pepper and sea salt
coat with Dijon Mustard
roll in fresh chopped sweet herbs...parsley, cilantro, basil, tarragon
broil on the charcoal grill ...high heat, fast, cook all sides to a nice crust.

Top with Remoulade
    3/4 cup mayonnaise
    1 1/2 tablespoons finely chopped cornichon or good dill pickle relish
    1 teaspoon finely chopped capers
    1 tablespoon lemon juice
    1 tablespoon spicy brown mustard or grainy Dijon
    2 teaspoon chopped fresh parsley
    1/4 teaspoon dried leaf tarragon, optional
    dash hot sauce, or to taste
    salt, to taste

Oh man what I'd give for some fresh striper.
