 Have yet to do a full turkeys..
Best way to do a turkey is to spatchcock it. It cooks faster and doesn't dry out.
Do one. They are easy and tasty.
This is a 12 pounder I did last year.

everything looking good guy!

kid brought me some more deer meat to smoke for him.  i brined a roast and ground some for deer logs.  he helped me make the brine and logs this time so he could learn. i smoked them both together at 225 with mesquite chunks on oak charcoal.  very tasty and the roast was rare all the way through!  i pulled it off at 135 and covered it to rest 20min.  the logs came off at 160 internal temp because i had a smidge pork mixed in this time.  the pork is just to help bind them together.

end results
 


made 5 logs but one never made it out the house.  we gobbled it up with smoked cheddar and club crackers. ;D

it is thats why i do it that way now.  you need to get some binder in there though for deer.  ill toss in half pound of fatty pork sausage and some mustard for that.  also grind it twice or three times really helps to make a stiffer product.  i roll them on cutting board and then roll them off onto my grate.  very delicate until cooked.  after 2 hours in the smoker you can pick them up and turn over and around for another 2 hours.  pretty sure i learned the log thing on here too!

tis the season for deer for everyone.  make sure you try a deer roast brined and smoked this season!

Good luck. They are a new favorite here at camp. Next batch I'm going to add diced peppers and onions. Also dice the cheese and mix everything together and fill entire macaroni with the filling. The sky is the limit on combo's for them.
