If you have a smoker, grab some corned beef on sale now. A good soak in cold water some Texas style rub, with time in the smoker, you will have some very tasty, cheap pastrami.

Nice, gonna have to try that.

I’ve done them in the smoker quite a few times and they do turn out delicious...just never thought to do the cabbage!

We had Duff's wings last night.
Not on the diet by any means but Jeff joined Donna and I and we had some fun.
I had 3 pints of Duff's IPA too.
Love that stuff.

Sorry, but I really don't like that place.
Gave it 3 shots over the years.
They overcook the wings for my taste.
Donna likes them crispy.
I like them more slimy.
The Duffs in Depew does them between those 2 ranges.
However, the grease was old, so they didn't really taste as good as they should.

Duffs also pre-fries the wings.
Many places do this that serve lots of wings.
Pre-frying creates confusion in exactly how long it takes to cook which tends to allow for inconsistancy.
It also tends to make them more greasy tasting.
Not much you can do as most places like Duffs, and pizzerias, that cook tons of them do this just to be efficient.
You want good wings, find a local small bar that changes thier grease often.
Also they NEVER fry fish in them.
French fries you can get away with.
But the better bars have 2 friers.
One dedicated to the wings and one the fries.
Keeps each food tasting as it should.
11-12 minutes in the frier.........or 9-10 for me........or 12-13 for Donna.

I like Duffs, but it still confuses me as to why they need to mess with the hot, med, mild that is standard everywhere else you go in NYS??..every time I have gone I have heard someone complain about how hot the med wings they ordered were... :-\

Jeremiah’s on Monroe ave in Rochester did some killer wings until they started expanding and building more restaurants. Then they went commercial. Now they stink too.

All those bars use frozen wings. They suck....plain and simple. Wings have to be fresh, dried and deep fried in good clean oil or they taste like cat food....maybe worse.

I’ve been making wings for 20+ years. I’ll have a “Wing Off” with anyone willing to compete.

Bar-Bill beef on weck, one of the best.

I think it’s time to dust of the turkey fryer and have a wing weekend. I have a restaurant i frequent that would carve me a portion of a 40# order, would be $100 or $2.50/lb for fresh wings.

My flavors when I fry my wings include:

Traditional Buffalo Sauce - Franks and Butter

Garlic Parm - real garlic and fresh parm cheese

BBQ - tossed in sauce then on the Weber

Plain - for the princess

No ranch sauce allowed! You ask for ranch, you’re asked to leave....
