Try this one

Classic Fried Catfish
 

¾ cup yellow cornmeal
¼ cup flour
2 teaspoons salt
1 teaspoon cayenne pepper
¼ teaspoon garlic powder
4 catfish fillets or whole catfish
vegetable oil 

    Combine cornmeal, flour, salt, cayenne pepper and garlic powder. Coat catfish with mixture, shaking off excess. Fill deep pot or 12 in. skillet half full with vegetable oil. Heat to 350°. Add catfish in single layer, and fry until golden brown, about 5-6 minutes, depending on size. Remove and drain on paper towels.
Makes 4 servings.

 Saw you post on the Cattaragus thread. You must be getting ready to cook that monster. Awesome catch! Congrats.!
 I have found, no matter what recipe you're gonna use, and for all types of cats or bullhead, they are 10 times better if you soak the fillets overnight in milk (refridgerated). Takes away much of that hard to describe ("muddy"?) but unpleasant taste that you see in cats, but don't see in your white fleshed fish (perch, yellows, crappie, etc.).
  Also, are you guys fishing these brutes for inland a ways, or more near the lake? (If you don't mind tellin')

I recently cooked up some cats and here's how I did it:

-Fillet and clean well
-Soak in milk for 24 hrs (see Fishryc's tip above), then pat dry
-Dip in egg
-Coat with crumb mixture (Ritz crackers, Parmesan, salt + pepper)
-Place on well-greased pan
-Top with chopped chives
-Bake at 350' (preheated) for 20-30 minutes (depending on quantity)

It really turned out great! VERY tasty...

here's a good blackend one

Grilled Blackened Catfish

6 x Catfish fillets
2 tbsp of vegetable oil
1/2 tsp of salt
1 1/2 tsp of paprika
2 tsp of onion powder
2 tsp of garlic powder
1 tsp of cayenne
1/2 tsp of dried oregano
1/2 tsp of dried thyme
1/2 tsp of celery salt
1/2 tsp of black pepper
2 tsp of lemon pepper
2 x lemons
 
Directions:
Grilled Blackened Catfish
Combine all of the dry ingredients into a small bowl and set aside.
Preheat grill to a high heat (500°F).
Heat a large cast iron skillet until a drop of water sizzles when it hits the surface.
Place 2 tablespoons of vegetable oil in hot skillet. Sprinkle each fillets with the rub and gently pat it into the fillet and place in the skillet.
Cook for approximately 2 minutes per side
Take them out of the pan and lay on the grill to get them makred up nice
serve hot with lemons.

i woild soak it in milk overnight for sure..  then i would do it like i do bullheads. butter the fish, season however you wish,wrap in foil and toss it on the grill. i did a cat this way once before and it was awesome

I did some the other day and they were great!
 Firstly, after peeling off the hide, I use a sharp knife and also skin off the thin but tough membrane on th outer side of the fillet. Then I carve out the red meat in a very wide ahd shallow "V" pattern, with the point of the "V" following the latteral line. Then ssoak in milk overnight.
 I cooked it on the lowest setting on the gas grill. Plain fillets on foil sprayed with cooking spray. I folded up the edges of the foil to make a panlike tray. As the fish cooked, large quantities of water and fishoil drained from the fillets and was poured off and discarded. when no longer seeping juices, the fillets were just about cooked and nicely firmed up. I then placed them directly on the grill, increased the heat a bit, and basted with a thin coat of BBQ sauce that was thinned out with water. (Tomatoe based sauce, not the vinegar based type) Very firm, flakey, and tastey.

Billybono has a good point, soaking them in milk is a must, even better would be soaking them in buttermilk............mmmmmmmmmmmmmmmmmmm
