I personally love the taste all year long however it does seem to taste better in the winter.  This may just be me.

The cold temperatures of winter and the cold water help preserve your catch better.  However fish that are kept well in hot weather will taste good as well.

i personally use a fish basket all of open water season. i like cleaning my fish as fresh as possible. i remember 1 time seeing my 1 fishing buddy keeping sheepshead in a 5 gal. pail in 90 degree weather. he had 6 in the pail all bloated and floating in the boiling water flies all over them.i said hey joe what you gonna do with them? he said take them home and eat them!!!!!! YUMMY!!!!! YUCK!!!!!!!
