Walleye wings? How bout bass wings

Since I rarely get to fish for walleye I decided to try a bass wing...thought to even try a blue full wing😁 too.....the bass was great...hill too but not worth the work....check it out:




take a kid hunting and fishing, it's a lot better than leaving them on the streets!!

In Quebec they're called Papillon. Done it with bass and walleye for years. A guide in Senneterre showed me how to use that tasty bit.

In Apalachicola Florida we had Grouper throat which is what we are calling wings here.  It was the best at Tamara's cafe.  When in Florida ask the servers to check with the Chefs to see when they prepare it for guests.  It is a delicacy and one of the favored down there.

I do this all the time with tautog and seabass.

I skin mine. Actually more like peel the skin off. I will also cut halfway through the center so I can just rip them open like an actual full wing at the joint.

I know raquett...thought about it too...last catch of perch for me were all nice...in fact 4# fillets srom 17 perch and didn't think about it either.

No real need to scale or skin if you just bread the meat side. The skin and scales fall away after cooking. Kind of like eating chicken wings or ribs. Borderline barbarian. 

I can only imagine how good salt water fish would taste.

You have no problems with that my friend.  I use perch wings all the time - for bait!   Tip a buckshot or stingnose minnow with that cut and see what happens😊

Pequod..do you use the whole wing or just part of it?....I see then you did get some of the stingnose jigs...the work pretty good.
