After I would skin and chunk them up, my mom used to par-boil then bread and fry them. Tasted like scallops.

The biggest eel I ever saw was in the Poultney River above the dam, probably 45 years ago. My brother and I were fishing one night. Just after dusk he hooked what we both thought was a huge trout. I jumped down over the bank to help him land it. Just as he finally got it close enough for me to belly and hook-shot it up the bank, it came out of the water with its mouth wide open. Might as well have been a Kraken! I jumped back up the bank in one bound! I'd seen plenty of eels, but that thing was huge.  We eventually broke it off, but it was better than 6 ft long with a 5" or better girth.  I kid you not. The bend never came out of that old bamboo rod!   8)
One more with the one we're after and we'll have two.
The brook trout is the prom queen of the trout world, and a promiscuous prom queen at that!
