 I have had beaver although I didn’t cook it , was tasty , muskrat aren’t bad either ,

   No not really. when you think about it, we eat squirrels, woodchucks, racoons, rabbits. they're all rodents. I'll try most critters at least once.

I've been to several sportsman's banquets and beaver was available although it was all gone by the time I got in line, Somebody liked it.

 On a side note, I've killed a couple bears and that is nothing special.

You're probably right filet. As I recall ,the stew was most likely what I would choose as the best of several different ways we tried it. I think I would do that again. The ground meat I thought was not good at all.
  Back to the beaver. I was thinking about a slow cooker with a red wine bath ?

Had an old guy near camp who wanted porcupine. So I decided to try one. Cooked it on the grill. Smelled good. Tasted good but tough. They need to go in the slow cooker.

My father was a woodchuck hunter. He always took the younger ones. I don't remember what they tasted like, but I do know that mom liked it and she was a bit fussy about such things.  I have to wonder, what's the worst critter that you guys have ever tried to eat. And I'm not talkin about Aunt Millies goulash that she always brought to the family picnic. I mean something that you killed and then wished you left it there!
