FYI to Southwestern NY hunters. Kennedy Meat Market in Randolph NY is not processing full deer carcasses. They will only accept boneless meat to make smoked products and sausage. Do not know the reason. If you have gone that far, you might as well finish it. Plenty of instructions and recipes on the internet (bearded brothers butchers you tube is one). Kennedy did hundreds of deer every year for many years. Could not find another processor in the area. Had to go back to Buffalo. Good luck to all.
