Jerkey recipe

There there seems to be so many great ideas on this board.

Thought I would see how you all make your jerkey.

I'll get back to you.  I have a couple I use that are pretty good.  I am sure that several of the members here have recipes too.  How about you bobberstop??

Their are some great products out their on the market taht give great results. or you can try to make up a few of your own. I like to take whole pepercorns and just crack them and then pound them into the meat a little red pepper sprinkled on top whorstershier sauce and soy sauce. Then into the Smoker till dry low heat . The other method is useing a premade package you can get from Cabelas or Gander Mountian.

     3 lb. Deer Meat, thinly sliced
     3/4 c.Wine, dry
     1/3 c. Lemon juice
      1/4 c. Onion minced
      1/4 c. Brown sugar
      2 ts. Liquid smoke
      1 ts. Seasoned salt
      1/4 ts. Pepper
      3 Bay leaves

   Marinate deer meat for 24 hours in marinade mixture, covered, in a cold part of the refrigerator. Turn meat several times. Remove meat, spreading out to bring to room temp. Place on oiled racks in a smoker and smoke at a low heat (160-190 degrees)for 5 to 7 hours,untill meat becomes slightly translucent and darkly red, near black. Store in plastic bags in refrigerator. I used wild cherry wood in smoker.

Venison Jerky
 


3 lb Venision-sliced super thin
1 Bottle Liquid Smoke
1/2 c Black pepper
1/4 c Seasoned salt
1/3 c Dry onion powder
1 dash  Lemon pepper
1 dash Paprika
2 tb Garlic powder
1 dash Cayenne pepper
 

Use a large container with lid. Mix all ingredients (vary spice to your taste). Add meat. Shake well. Refrigerate 24-48 hours shaking often. Spread in dehydrator. This takes usually about 3 to 6 hours.

I use hi mountain jerky cure. I love their original jerky cure. I always cure my jerky so I don't have to refrigrate it. Most of the time it doesn't last long enough to worry about it, but I want to be sure when I take it hunting or fishing w/o refridgeratation and the only way to be sure is to add cure to it. I also smoke mine at 180 to 200 and just watch the color.

Here are three more which can be done in a dehydrator or smoker...

1/2 c teriyaki sauce
1/4 c liquid smoke
1/4 c chopped green onions
1/4 c water
1 lb venison (silver skin and any fat removed), cut into thin strips
1/2 tsp crushed garlic

Mix ingredients.  Marinate overnight in the refrigerator.  Smoke over hickory or put in dehydrator.


1/2 c soy sauce
1 clove minced garlic
2 tbsp brown sugar
2 tbsp ketchup
1/2 c worcestershire sauce
1 1/4 tsp salt
1/2 tsp onion powder
1/2 tsp pepper
2 lb venison (silver skin and any fat removed), cut into thin strips.  Mix and marinate overnight in refrigerator.


2 tsp chili powder
2 tsp dried garlic powder
1 tsp brown sugar
1/2 tsp cayenne pepper
1/2 tsp liquid smoke
2 tsp pepper
2 tsp dried onion powder
2 tsp salt
2 lb venison (silver skin and any fat removed), cut into thin strips.
1 c water

Mix and marinate!

I near went broke during ice fishing season buying Jerkey.
