Title: Man, Meat, Fire.......Beer!

I know you guys and gals are cooking up some good eats for this holiday weekend.

We have a nice pork loin roast turning round and round. My Bride made some of her nearly world famous potato salad. Some steamed asparagus and we're good.

RG, that Pork Roast looks to be done to perfection!

You've got me thinking about a couple of ribeyes I have stashed in the freezer. Prime Angus if I recall. I'll probably wait  couple of weeks though. I'm working my way back down to fighting weight. 23 lbs so far. About 12 to go.

Bob - Donna and I have a killdeer on our stone driveway out at the lake sitting on 4 eggs.
2nd time this has happened.
About 3 years ago another one did the same thing.
We moved the picnic table over the top to protect her from the rain and also keep people from stepping on them.
I shoulda took a photo.
Those killdeer eggs are really camo'd good in the gravel.
Really hard to make them out.

Yeah, they don't seem to be too choosy about nesting sites. There's a pair most years just off the parking lot in the plaza near my home. They go nuts when I make my morning run. My route takes me around the plaza.

I'm gonna check the box again later when I see them both outside and do an egg count. I'm a certified nest watcher with Cornell's Nestwatch program.

I always knew I was certifiable :-\

Ain't no oysters in that recipe :w00t:

Really simple.
Red, yellow and orange bell peppers...chopped fine.
Sweet onion
1 Heineken
Bacon bits........reel bacon not that bottled stuff!
Parmesan cheese
1 can of minced clams

Crisp some bacon bits, chop the veggies....fine. Spray the clam shells with some cooking spray.

Mix up the veggies, bacon, clams, and some cheese.

Fill the shells....top with a strip of bacon ( there's no limits to bacon) and a sprinkle of cheese.

Roast them somehow...........I like the Weber at around 400 degrees.

Oh yeah......2 more heineken ;D

My Grandson is the same way. He was 12 before he started eating hot dogs and hamburgers. Before that the kid would only eat grains, fruits, veggies or berries. He's grown a foot taller  in the last year I think.

Any of you do a "Spatchcock" chicken on your grill? We do several every summer... cooks quicker than a bird left whole and closed up... about 45 -50 min vs 1-1/2  hrs. or more.

Any of you do a "Spatchcock" chicken on your grill? We do several every summer... cooks quicker than a bird left whole and closed up... about 45 -50 min vs 1-1/2  hrs. or more.

I did that with my Jake turkey this spring, turned out terrific!  My wife and daughter even had second helpings!

If it were a chicken I would have left the two halves connected, but the turkey would have been too big to move around on the grill, so I halved it.  I also brined it for three days, then olive oil and seasonings before grilling.  I've done it with wood duck before, but just cut through the breastbone, then sort of smash it flat with the palm of my hand. 
I'm sure there's a Julia Child YouTube video on how to do it.

I get it. I've done that by removing the breastbone and rib cage leaving everything connected by the backbone.

That was a 4 lb chicken and it took about 1:45 to cook on the rotisserie. It was marinated with rub, lemon juice and Italian dressing. I strained the marinade and injected the meat before cooking it. Saved a bit for basting.

That's pretty much how I do it and yea, there's a pile of YouTube videos on how to do it. Nothing to it really, only takes a sharp knife and a minute of your time.

Wanna....

I did slice my finger with the game shears when I was doing it.  Not careful enough.  Passed out on the back porch and my wife took me to Urgent Care for 6 stitches.  That turkey got his revenge on me for sure!

I brine my Thanksgiving bird too, then stuff and bake the traditional way.

That's for sure... I knew a family of  five years ago that spent the entire Thanksgiving weekend in the hospital because the Mrs. was in a big hurry to get dinner on the table and served a stuffed bird that was not fully cooked. My Mrs. and I never stuff a bird, the stuffing is always made as a side dish. And I always use a meat thermometer for all meats I/we cook, never trusted those little plastic "pop up" things. I like my red meats medium-med. rare but poultry has to be 180 or it stays on the heat.

You have to use a reliable digital thermometer.....especially for poultry. I've had brined turkey.....it's ok. Im not sure about leaving a poultry product to steep for more than  day in the fridge. For the family thanksgiving we do an oven bag..not stuffed. Beef I like on the rare side. My Bride likes it like shoe leather. Not easy.

On the rotisserie, a small turkey takes about 4 hours at an average 325. When the leg wants to fall off, it's time to check the temp.


On another note, we just cooked up some 1/4 lb Zwiegless skinless Frank's for din. Dang.....that's a dog and a half.

I actually stuff mine with pasta. (Very small tubitini size) and cheese, the giblets, etc and several other items.  It's our traditional family recipe that we grew up on.  I've only had "regular" stuffing 2 or 3 times in my life.   We make an extra bowl of it because it is a high demand item at the holiday table.   Instant thermometers are a must, I yank out the ones inserted into the bird. Useless.

I've been looking for store made sausage in the Syracuse area.  Any one have suggestions?  I don't care for Gianelli or Wegmans sausage, and all the old Italian delis are long gone.

You're right about that Rg. A friend of mine grew up on L.I. and I've been on a number of fishing trips to Montauk with him over the years. He knew the whereabouts of some awesome Delis on the Island. The Sopresseta those folks make is incomparable and there are some Bagel shops down there that are stellar!

I've tried Asciotis meatball mix, not my favorite.  I use Momma's old recipe.  Cannot be beat.  ;D  I have not tried their sausage but will do, they are only 20 minutes away. 

Cummos is even closer, and they did have good selection of cut meats, didn't look at their sausage but will give that a shot too. 

You are spot on about Hoffman's, had some tonight and will cook up the rest of the package in a couple of days.

When my Daughter and Son-in-law were living in Las Vegas, they used to have me ship Zwiegles reds and whites to them because they couldn't get a decent hot dog out there.

Any of you have Hot Dogs made with your venison or make your own? I usually have 20-30 lbs. made each year and I'm down to one pack left already!

I have the inner loins from my Buck thawed and ready to put on the grill along with a couple of baking potatos when the Mrs. gets home this eve. I'll give the loins a light coat of EVOO and dust them with McCormick's Roasted Garlic and Herb seasoning prior to putting them on (when the potatos are 3/4 done). The taters get a coat of oil and a dusting with Kosher salt.

A little Chicken Cacciatore on the Weber. I grilled the chicken thighs for a bit to brown them first then I made up the casserole and finished it on the grill. The charcoal element was just delicious.

The Mrs. Cousin was coming out from Long Island for a visit so I held off on the Spatchcock chicken until Tuesday. It was a big hit with her Cousin, she said  she'd never seen anything like that before...I told her I'm certain there are folks on Long Island who grill Chicken very similar to what I did!

The little can in the back of the first pic is my "poor man's smoker". It's nothing more than a soup can with two 3/8" holes drilled about 1/4" up from the bottom and 180 degrees apart. I then drill a bunch of 5/32" in the bottom of the can to allow the ash to fall through and allow air flow. Throw in a handful of chips of your choice and light them with a torch through the 3/8" holes until you get a nice smoke rolling. It adds that nice touch of smoke that you wouldn't otherwise get using a gas grill. A half can of chips will smoke for an hour or better.

After... 5-1/2 lb. bird cooked to perfection in a little under one hour.

Good eats indeed.  These just came out of the smoker for my afternoon snack. I grew giant jalapenos this year and they were so big my wife decided to add chicken inside  with  all the regular stuff - Chicken wrapped in peppers wrapped in bacon.

Mmmmmmmmm.....bacon. I grew some giant jalapeņo myself this year. Darned things got to be 6" long. They've mostly gone into the pickle jars though I have some coming in that will go to salsa.i like your smoked, wrapped idea. Looks delicious.

Weber Potato Nails..... About $10 for the good, stainless Weber set.

Wash the taters and stick a nail through them lengthwise. Brush them with a light coat of olive oil. I sprinkle garlic powder, salt and pepper on them. Put them on the grill to roast with indirect heat. The nails help cook the centers by transferring heat. I've read some skeptical reviews, but, in my experience they work the nuts. Roasts a decent sized baking tater through in about 25 minutes at 350-400 degrees.

When they get to being done, move them closer to the coals to give the skin a little brown.

Beer can burgers. Start with your"ball" of burger.  Press it flat with the bottom of a beer can. Pack and form what squeezes out around the can and wrap with bacon.  Remove the can, drink the contents, and add/ stuff the hole with cheese and whatever else you like.  These are stuffed with mozzarella, onions, mushrooms, and cheddar cheese.  Use whatever you like.  Cook on grill with indirect heat until done.   Enjoy.   ;D

Does Lowes carry them? My Mrs. bought a "potato rack" from Pampered Chef and it works great but it's kinda bulky and it's a PITA to clean up.

Haven't seen them at Lowes.

Made some salsa today. Used my own hot pepper and heirloom yellow tomatoes.

Are any of you into fermenting vegetables in a crock? Bought the Mrs. a 10 liter fermenting crock a few Xmas' back and we made homemade Kraut in it last winter. Darn good Kraut if I must say! We just opened our last quart yesterday. Much better than that canned or bagged processed crap in the grocery stores. We're gonna try dill pickles in it next. Easy to do and much better for your digestive system than the processed stuff.

I was planning to try making some kraut in a 5 gallon bucket this year.  We also corn our own beef.  As Attack said, it's easy and sure beats store - bought.  ;D

Wegman's Deli gets dill pickles in 5 gal buckets that are food grade and obviously meant for brine. They gave me two of them with lids a couple of years ago. They're great buckets, just takes a little while to get the "pickle smell" out of them but that doesn't hurt anything. Check with them or other area markets and you may be able to score a few just by asking for them

Those 5 gal. buckets make good seats for ice fishing too . Two buckets allows me to carry my supplies and lunch  plus it carries my perch fish home at night!I use a cooler for my brining lined with a plastic bag. I do corned beef and Easter ham yearly. Works good and allows me to keep the brine solution surrounded with ice.

OMG this was good! So good in fact, I ate the whole fish! ;D Mushrooms and walleye saute'd in olive oil a little salt and pepper and garlic powder and sprinkled with parmasean cheese and cilantro in the last minute or two.
Also  with Marie's cole slaw, broccoli, cauliflaur, carrots and fresh yellow beans from my garden, tomato slices, a little cocktail sauce and Skaneateles Lake mint ice water. :D
Oh yeah, followed by a Hershey bar that I'm eating right now as we speak, lmao. ;D

Here's a shot of the Black Raspberry Jelly I made this year...Mmmm. My friend has a hillside that is shaded by Black Walnut trees and the berries grew very well there...I could only pick about a cup around my yard this year due to the drought...No one I know found many berries at all...So glad my friend likes to share :)

I grow 5 kinds of basil, Greek oregano and  flat and curly parsley. Nothing is  better than fresh herbs from the garden. I dry a bunch for the off season months.

That jam looks scrumptious. Black raspberries are my favorite.

I squeezed every little stinking seed from those berries. :o The berries were a bit dry too this year. I had trouble running them all through my hand crank Villa Food Processor. The auger got plugged up halfway through 9 qts of berries! In a normal year I can squeeze all the berries and then run the fiber and seeds through again to get more juice...but this year I knew that wouldn't fly...so I had to squeeze the pulp and seeds through cheese cloth and a hand squeezer thingie to get the last of the juice...It worked out Ok and it's great on some vanilla ice cream as well as toast and PBJs. ;D
Now if my tomatoes will just ripen I'll be eating BLTs! ;D

Rack with a Kansas City style Maple Sugar rub and grilled Mexican street corn with lime juice and fresh cilantro butter.  A shaker of margaritas along with it made for a pretty fine meal.  ;D

I don't think any form of grilling or cooking on anything outside of the house should be done without a favorite beer in hand so yes, I vote that we call it Man, Meat, Fire, and... BEER!!  ;D

I just bought the stones Trap. there's  about $100 there all total including the bags of river stone I put under the pit. We love it. Nothing like a cool fall evening by the fire.

Tell him to rub the taters with some olive oil and his favorite seasonings before putting them on the grill. We like garlic powder, kosher salt and coarse pepper.  20-30 minutes at 350 will do it.

They work in the oven too.

I'm gonna get a set of those Potato nails if I can find them locally. Never did like that thing we have for taters... to much of a PITA to clean up! Got so I'd just do them on the grill by themselves. I know the nails will transfer heat into the potato and make for faster cook time.

Does Lowes carry them Rg?
