15 pound beef brisket went in the smoker overnight at 210 with some cherry chips for 8 hours, then got capped with vidalia onions and maple bacon back in a light smoke for 3 more. Wrapped it up with some broth and 1/4 cup of cider vinegar for 3 more hours at 200. smells amazing..... Cant wait to cut in to it later!
