Great, have a simple recipe for them and get some great smoke on them.

I try to stir mine every 30-40 minutes.
This helps to get more smoke into them and also helps to remove moisture so they thicken up a bit.
I know you aren’t supposed to be opening up a smoker often but we break this rule when doing beans.

I'll have to try stirring them more, they didn't get very thick, but had great flavor. I open my smoker quite a bit to check things, still getting a feel for how it cooks things since it's new to me.

The better half had all the grandkids show up this afternoon, so I stuffed the smoker with chicken, not much talking at dinner time.

15 pound beef brisket went in the smoker overnight at 210 with some cherry chips for 8 hours, then got capped with vidalia onions and maple bacon back in a light smoke for 3 more. Wrapped it up with some broth and 1/4 cup of cider vinegar for 3 more hours at 200. smells amazing..... Cant wait to cut in to it later!

Dom it was freeking stupendous  :) We got the Idea last year at hunting camp and we pit baked it. I decided to try it smoked  and honestly I can't decide if I like it better either way 🙄

Looks like piglet got butchered, bit had a few ribs to throw in the smoker

Not on the smoker, but in the grill.

Boneless chicken breast, marinated in teriyaki sauce in the fridge for 3 days, then stuffed with chopped garlic and wrapped with bacon.  Also have some fresh corn on the cob to go with it.
