Found a small beef roast for the smoker the other day. Marinated it overnight and now it's cooking.

Looks great cuz..

Mine was delicious…. Along with the other fixings.  Mashed potatoes, corn and broccoli and my smoked peppers… ;D









 And a wine bottle pourer honed on one side makes a great cherry pepper cleaner..

Smoked a turkey for dinner today.  Also put in a few bulbs of garlic.   Not quite sure what I'm going to do with the garlic yet . Any suggestions?

Food processor with a stick or 2 of butter.

Makes one hell of a batch of garlic butter to use on almost anything - bread, rolls, potatoes, veggies, grilled steak, etc.

Got a recipe for smoked, stuffed manicotti last week. Turned out great.
Take a raw manicotti and stuff 1 end 1/3full of sausage, burger, or a mix of both which I did. Then cut a chunk of cheddar cheese and insert into the middle third. Then pack the other end with more meat mixture sealing the cheese in.
Wrap the macaroni with a slice of thin bacon. Dust with your favorite rub and brush with bbq sauce.
Put in a 225 degree smoker for 2 hours, then bump the temp up to 275 degrees to crisp up the bacon for maybe 20-30 minutes. Brush again with bbq sauce and return to the smoker for 15 minutes to set the sauce. Enjoy.
The moisture from the meat softens the macaroni as it cooks. The vultures at camp inhaled a couple dozen in minutes.

Best way to do a turkey is to spatchcock it. It cooks faster and doesn't dry out.
Do one. They are easy and tasty.
This is a 12 pounder I did last year.
