Got a recipe for smoked, stuffed manicotti last week. Turned out great. Take a raw manicotti and stuff 1 end 1/3full of sausage, burger, or a mix of both which I did. Then cut a chunk of cheddar cheese and insert into the middle third. Then pack the other end with more meat mixture sealing the cheese in. Wrap the macaroni with a slice of thin bacon. Dust with your favorite rub and brush with bbq sauce. Put in a 225 degree smoker for 2 hours, then bump the temp up to 275 degrees to crisp up the bacon for maybe 20-30 minutes. Brush again with bbq sauce and return to the smoker for 15 minutes to set the sauce. Enjoy. The moisture from the meat softens the macaroni as it cooks. The vultures at camp inhaled a couple dozen in minutes.
