They do look great. I can almost smell the smoky goodness if I get close to the computer screen. I might have to throw some in my smoker this weekend. Camp closes Monday. We usually do one last feast there.

We got rain, so I slowed them down on the smoker to allow the rain to pass so people would not be walking over and standing in the rain.
It allowed a bit more smoke into the wings for my taste, but the reviews were good from everyone else.
2 people said they were bit spicy
I didn't add any heat.

Left the Pit Boss pellet smoker covered today.

Baby backs today. Braising on the grill first then finish in the slow cooker with a little Sweet Baby Rays for some sweetness.

Smoking a prime cut standing rib roast and, of coarse, some beans.
I dried the roast in the fridge unwrapped for a bit longer than 24 hrs.
Rubbed it with a little EVOO and then coated it liberally with some Montreal steak seasoning.
The beans are a large can of Bush’s.
Doctored with yellow mustard, maple syrup, chopped onions, chopped poblano pepper, and 2/3 lb of chopped raw bacon.

It was amazing
The horseradish was way too hot.
WAY too hot.
I like heat, but this was nutz.
Up north I grew my own horseradish root and ground my own since the late 80’s, so I know a thing or 17 about good horseradish.
Anyway, here’s the pics of the meat.

Ribs went back into the fridge.

My go to is my homemade from the roots I grew back up north.
Jeff owns the house now and he does like horseradish, but unsure if he will ever pull any roots and process them.
He knows how as he has done it with me many times over the years and it's quite simple.

But if I buy it in a store, I typically buy Helluva Good.
I didn't see it down here.

Here is what I bought.
I kept it hoping it loses some of its bite.

I'm still a newbie down here and will find what I like.
I typically eat a lot of horseradish, so I'll be working on getting what I like to eat.
I'll keep my eyes open for that one.
