How do you distingush between them all? I caught one through the ice recently and had no idea what kind it was

Big red or some other biologist will answer better but that is a bullhead..  aka yellow belly, white cats are lighter, and channels have a darker back and silvery belly and forked tail, that is def a bullhead

If with you bigbigrdg,... the standard "catfish" or an occasional "hornpout" is what is in my vocab.!

BBR,

What your holding is a brown bullhead, they are a brown, muddy color.
A white cat has more of a gray color and the barbels right below the chin are white. Their tails are also have more of a fork than the bullhead.
A channel cat also has a forked tail, but lacks the white barbels. The color can vary from very dark to fairly light and can have speckels.

I've caught whites at night through the ice, when the flag goes up you should run, one of them almost spooled me.
