Skinned and quartered my deer this morning and put in cooler and smoked a little more walleye!

Sweet. I just had a nice doe given to me this morning. Just in time for my baloney on Friday. Was going to have to  buy beef but now I'm good to go.

Didn't get pictures, but I did up 5 pounds of bacon wrapped venison backstrap in the smoker for an end of season dinner at camp on Saturday. I won over two people that didn't like deer meat to boot. They want me to do some for our New Year's dinner.

Nice DS ,fresh venison loin with homemade garlicky mashed potatoes topped with pepper and Frank's red hot !!

Been busy. My young apprentice is doing well. Together we took a deer from start to finish. He loved it. First the deer.


Grinding. He also had to show his 10 year old sister how it's done.




Fun stuff.


He didn't get to stuff tonight because it was a school night. Grandma and I finished the baloney.


20 pounds.


In the smoker with 27 pounds of Canadian bacon. I like dusting the loin with garlic pepper before smoking it.


Everything is running good. Time to go move a couple tree stands while the smoker does it's thing. More to come.

Money shot. I know what I'm having for supper tonight. The kitchen smells heavenly right now.



The venison baloney chubs will be in for 3 or 4 more hours due to their size.

We don't emulsify the meat. The coarser grind is preferred.
