Title: Best way to D-bone trout

Any one have any good sugestions for how to d-bone trout before smoking them ?

i can't believe this post hasn't had any replies...so here goes...i presume that you intend on slabbing your trout with skin on before smoking...just remove the rib cage...near the upper portion of the meat...you will see a strip of bones which can be easily felt and seen...they run slightly angled upward...with a very sharp filetting knife..cut down but not quite to the skin....do this on both sides...you should now be able to remove this very narrow strip leaving you one nice slab of fish for brining...its been awhile...so hopefully someone will give you proper advice on brining time for slabbed trout.....grump :P
