my favorite for any fish including shellfish
dip fish in seasoned flour (salt, pepper and a little garlic powder)
then go into an egg wash
go from the egg wash into panko crumbs (Japanese bread crumbs)
and then directly into good hot vegtable oil...
You need to make sure it is hot enough but not too hot. Take a wooden spoon
and dip it into oil and when it starts to bubble on the handle its ready.
We do this on the ice and we cannot make enough or make it fast enough.

I use this with trout and salmon and think it would work for you as well. Take your fillets, coat them in flour, then coat them in mixed up eggs (beat up like you were making scrambled eggs) then bread them with italian bread crumbs (about 3 cups in a freezer bag, with a 1/8 to a 1/4 of parmasian cheese mixed into the bread crumbs) they come out of the deep fryer really yummy and tasting GREAT. Take Care God Bless LOL Dave

Try grilling or broiling topped with salsa.
Brush with garlic, salt , pepper and olive oil. Top with salsa.
You're gonna love it ;D

crappies are too soft to grill without tin foil , it would just flake apart when you try and flip it , i like to mix italian panko and progresso bread crumbs and do the triple thing . or a good beer batter ;)
