Title: Ya Know....We Need Another Cooking Topic!

I know...this is a fishing site.
But...most avid fishers love to cook. I thought it might be cool to share some cherished family recipes with our fellow fishers.

This should be about whatever you cook for your family or yourself that is one of your favorites. I know I have a bunch of good home cooked meals that my BRide and I enjoy.

Whatcha all think?

One of my favorites..
1 lb of bacon
Head of cabbage (shredded)
1lb of ground beef
16 oz of sour cream
Sweet onion
Salt..pepper...garlic

1 lb of bacon.. cut it up into pieces.. cook up in a deeper pan.. while that is cooking take 1 lb of hamburger and cook that up with some chopped onion..salt..pepper.. and of course garlic.. once the burg is cooked , drain it and set it off to the side.
Once the bacon is cooked take shredded cabbage and put into pan with your bacon and ALL the bacon grease and cook cabbage till desired texture.. once the cabbage is cooked  add the hamburger and sour cream.. stir all together and enjoy

Fried cabbage, bacon, and noodles is a favorite in our home.  Just had it this weekend.  Left to my own devices, I'd substitute bacon grease for butter every chance I get.  Particularly on sweet corn and potatoes.

Everything is better with bacon! I make some double dark chocolate brownies with crumbled bacon on top. 👌

Last night we had one of our favorites. We call it "the egg thing". It's sort of a stove top frittata. One of those refrigerator meals that you can make using whatever you have  at hand.

Ours was pork sausage, broccoli, sweet bell pepper, onion and fresh wax beans topped with Munster cheese.

Spray a non stick skillet with cooking spray and brown the meat.
Add the vegetables with a bit of water ( 1/4 cup or so) to deglaze the pan. Cover and steam sauté the veggies with the meat.
Whisk 5 whole eggs with about 1/2 cup of milk adding salt, pepper and fresh parsley (if you have it)

When the veggies are tender, deglaze the pan again if necessary, give them another spritz of cooking spray and toss.

Pour the egg mixture over the veggies and meat, top with your favorite shredded cheese, cover and reduce the heat to low.
Rotate the pan every few minutes to cook evenly until the eggs have set.

A quick yummy meal.

i save bacon grease from breakfast in a ice cube tray in freezer i cover with tin foil or clear wrap and i have my bacon cubes to start things off cooking when i need oil or greese
great when frying homemade perogies!!!!

   I couldn't agree more!

Cajun Walleye with chambord buerre blanc;
Pat dry the fillets, let them rest an hour at room temp
In a small sauce pan on medium heat melt a tbsp of butter and a tbsp of xvoo
add 3 finely diced garlic cloves, just browning them
add a sprig of tyme lightly crushed
add 2 cups white wine, I use Chardonnay
add 1/2 cup chambord
add 1/4 of a fresh lemon lightly squeezed
bring to a boil then slow to a low simmer
1 stick salted butter sliced into 1/4"
simmer the reduction down till it begins to get small bubbles, ie the sugars are out.
strain
add back to pan on low heat and SLOWLY fold in the butter stirring constantly to avoid breaking
 
The eyes I give a liberal dusting of Cajun while heating a cast iron pan or skillet, seasoned with bacon grease of course
give the fillets 3-4 mins per side

Once the sauce is done remove from heat immediately
pick your favorite veggie
steam some rice
pour that raspberry lemonade buttery goodness all over everything and enjoy!

Yikes....chef Eddy strikes again! Sounds wonderful and I love making sauce reductions.

In the fridge I have a jar of port wine reduction. It was a reward for turning a mortar and pestle for a good friend. He was a chef for many years. I've used it on beef, pork and chicken with delightful results.

Ever had a Chambord Royal?

For me, slow cooker season is upon us. Allows my family to eat right after work and before dance, gymnastics and other after school activities.

Today's meal is Mexican Pot Roast:

2.5 - 3.5lb boneless chuck roast
1 onion sliced
baby red potatoes
package of taco seasoning
2 TSP cumin
Salt and Pepper to taste
1 14.5oz can roasted diced tomatoes, drained

Spray slow cooker with cooking spray. Arrange onion and potatoes in slow cooker. Place beef over vegetables. Sprinkle seasonings.  Pour tomatoes over beef and vegetables.

Cook on Low heat 8 to 9 hours or until beef is tender.

Gotta make yourself one Ed. My son and I go to cocktail and Bourbon tastings a few times a year. It's a great night out. Get an "Uber" and have fun.
 Had a Chamborg Royal last year at one. Really tasty. Also the best Bourbon old fashioned I've ever tasted..

The prep work;
1lb baby carrots sliced
1 celery heart sliced
1 large Vidalia onion diced
1 large head of garlic sliced
1lb baby Bella mushrooms sliced
1 tbsp each fresh oregano,tyme, rosemary
4 lbs moose in seasoned flour, I use salt, pepper, granulated garlic, and Cajun

  Now you can use regular carrots and celery or any onion you want, but theres an old saying when it comes to soup, you get out what you put in. These are sweeter and it comes through.

Carmilize your veggies, add in the garlic. Let that cook for another 3 mins then add 1/2 cup bacon grease. Add your moose and mushrooms browning the meat. Add your herbs and some crushed pepper. I use our dehydrated blend of japs, Hungarian wax, cherry, and this year carolina reaper  :o

Deglaze the pan with a beer, darker is better. Add cold water till it's about 2 inches above the rest. Bring to a boil, then cover and simmer for 2 hours.

Add 1 lb baby red potatoes.Check your meat for tenderness. While that's going on make a nice dark rue. Once youre satisfied with the meat add a tsp of beef base, I use better than bullion.
Add some frozen peas and bring to a boil stirring regularly. After 20 mins taste, a just if you need too, then stir in the rue and simmer for another 5.

Funny, Mrs. Dots is making pie as we speak, while I sip on a wonderful Cider Caramel cocktail!

I tried my hand at applesauce today for the first time, came out really good. 
I used 4 types of apples, and wound up with 4 textures, thats fine with me. Macs, Galas,  Jona Gold, and Honeycrisp.
Jared up 4 pints. Picked em at Appledale in Mexico, man what a gem that place is.

Not really. The filling can be easy or less easy. I prefer home made filling. The recipe isn't all that difficult to accomplish. You can substitute a prepared lemon filling and it comes out just fine. Graham cracker crust is easy as ground up graham crackers, butter and sugar. It can be baked or not. I prefer lightly browned.

The meringue is also easy with a nice kitchenade stand mixer. Simple ingredients, egg whites ( the yolks go into the lemon filling in my recipe)  sugar, vanilla and cream of tartar. My advice is do not substitute or skip the cream of tartar. It does it's work adding acid to bind the egg whites into a firm meringue.

There's a ton of recipes online. I use one from a very old Betty Crocker cook book. They weren't afraid of butter, sugar or eggs when it was produced.

I make one of these a couple times a year. All things in moderation.

And today smoked pile of walleye
Smoked some venison Summer sausage and made venison sweet potato stew ,nice relaxing weekend

I used to help out on my friend's farm making syrup in the spring and cider in the fall. We seldom pressed cider without a bottle of Grey Goose on the side. Vodka and fresh pressed apple/pear  cider.....mmmmmmm! Good!

Tonight was one of my favs. Black Beans and Rice......my way

Red, yellow, orange bell peppers, onions, black beans, turkey kielbasa.

Sometimes I use Rice-a-Roni Long Grain and Wild rice.

Prepare the rice.

While the rice is cooking, brown some turkey kielbasa in some olive oil.

Chop red, yellow and orange bell peppers, onion and add to the kielbasa to sauté till soft.

Drain and rinse a can of seasoned black beans and add to the peppers, onion etc.
Season with Franks red hot, Worcestershire sauce, chili powder, cumin  and soy sauce. Add a bit of heat with you're favorite hot pepper shake.( I make my own) cover and simmer till warmed through.

Mix the peppers and such with the rice and serve with shredded parm or asiago cheese.

Seriously delicious!

I'm feeling a lot better Bob thank you I have a meeting with my surgeon on Friday to schedule the gallbladder removal hopefully it'll be a quick and easy procedure with just a weeks recovery

Tonight it was home made pasta and white clam sauce with shrimp.
In the pan.....( I don't do proportions for this kind of recipe. It just happens)
1 can chopped clams with juice.
Olive oil
Chopped garlic
Black opal Basil flowers
Greek oregano

Crushed red pepper
White wine ( I used Pinot Grigio)
Raw, peeled, deveined shrimp.

I'd put up a pic of the lemon meringue, but I don't want Fred to vapor lock.

Tried my first cast iron skillet pizza for dinner.
Got the dough all patted out, ( store bought)

Preheated the skillet on the stovetop with a good splash of olive oil. Dropped the dough in the skillet and baked it at 500 degrees for about 10 minutes.

Topped it with sauce, sausage, peppers, mushrooms ( all pre cooked), pepperoni and mozzarella. Popped it back in the oven at 500 for about 15 minutes.

Best pizza I've made yet. Next I'll work on my own  dough and sauce. The store bought is a bit sweet for my taste.

Omg level good....
Wegmans honey brined turkey breast, give it a good sear at 475 for 20 mins, roll it back to 325 till 160 internal temp. Blanch asperagus, no more than 2 mins at a boil then shock. Render maple bacon, I use Wright's. Remove crispy strips with a slotted spoon, add a tbsp xvoo then diced onion and garlic till translucent, add sliced shrooms and season to taste, add the speragu toss, remove from heat and cover while the breast rests. The sweet taters get a boil till fork tender, then milk, butter, pumpkin pie spice and a table spoon of honey.

My recipe is basically the same as his.
Start with a roux.i like to sauté some diced onions and jalapeño peppers in the butter before adding the flour.

I use half and half rather than heavy cream and I prefer extra sharp cheddar, jalapeño Jack, shredded Asiago, ,Parmesan and a block of cream cheese for the sauce. Although, I like his idea of adding sour cream and mayo to the mix.

Rotini works better than elbow macaroni. More surface to pick up the cheese sauce.

I top mine with bacon crumbles and seasoned Italian bread crumbs.

Cast iron skillet is definitely the way to go. 

350* for about an hour.

Super delicious but, don't make it too often. It's a heart attack waiting to happen. Malcom looks like he eats it for breakfast every day.

I was a very good boy and passed on the deserts. We did make a cherry pie today though.

Cooked up a pot of chicken noodle soup today. Tomorrow is our "Un-Thanksgiving" dinner. Angus filet mignon, baked taters, wax beans (from the garden), hearts of iceberg lettuce salad, garlic Parmesan toast and a nice bottle of Chianti.
 Vanilla bean ice cream and bourbon for desert.

i hear ya FR my wife got a double layer carrot walnut cake with cream cheese frosting i ate the darn thing in 3 days myself left her one piece , a small one at that!
2 days i ate it before i ate dinner so i was sure to have room!!!!

When put in frying pan only 3 will fit! There big girls ,the way my mom who's parents were from Poland taught me
My wife bought Mrs T's one time and my kids laughed and said" those aren't perogies they are raviolis"!! Haha it's my yearly tradition to start making them when I get layed off and during deer season, give alot to boys and rest of family,be making alot more through winter !

Oh and here is a 148 hour dry aged venison top round steak with melted sharp cheddar and rhubarb wine infused onions and mushrooms as a second topping. Mashed potatoes and a salad on the side to fill up those calories burnt hunting all morning. That was Dinner, Pheasant soup was lunch.

Well, I'm happy with home made chicken noodle soup tonight. Yesterday my Son and I had angus filet mignon, baked taters and wax beans from last summer's garden.

  Surgery went smoothly, and i was on my feet in a couple hours, and felt good enough to strip the turkey and make a broth... Smoked turkey broth is amazing! Since they want me on a mostly liquid diet for a couple 2-3 days I find a few ways to enjoy it. I'm supposed to slowly introduce solid foods back so lunch today will have some barley and baby carrots with spinach and a few small pieces of white meat in a cup of broth.

Been sniping tree rats off the bird feeder hoping to get the SOB that is in my attic. I've been looking for different recipes to try and came across this one. Looks good to me.



Hopefully, In a few more days I'll have enough to give it a whirl and report back.


As a side note, after over 50 years of skinning them, I finally found a method of skinning them that eliminates hair on the carcass. Do it under running water in the sink. Soak them down good. Then while under the faucet, cut across the middle of the back about 2" long. Again under running water, put your fingers in the cut pulling in opposite directions and peel the hide off like a sock. The water keeps 99% of the hair off the meat.

Spent a lot of today testing appetizers for our Christmas Eve party.

Breaded/ fried Italian sausage meatballs and smoked sausage links in Sweet Baby Ray's "Sweet and Spicy "
Deep fried sausage / cheese raviolis breaded with Italian panko with an Alfredo dip
Nacho platter with home grown, pickled jalapeños, home made salsa and cheese
2 lbs of shrimp with my nearly famous cocktail sauce
Bruschetta with pesto and asiago cheese
Pepper jelly/ cream cheese dip
Phyllo pizza cups with sauce, pepperoni and cheese.....and cheese......and maybe some cheese

Made a plethora of appetizers for our party tonight. We made it through 80% of the dishes before screaming TILT!

No worries, some for tomorrow.

On an exquisite note, my Son ( bless his soul) gave me a bottle of Eagle Rare. And my daughter brought me a box of "Hedonistic Chocolates" . Sea salt coated, dark chocolate, creamy caramel morsels to swoon over. Made right here in Rochester.

These will be hoarded!

 At one point it looked done and stuck a thermometer in it and it didn't move...

Last prime rib I cooked I let it sit out till the center was almost at room temp. Took several hours. Then I roasted it in an oven bag at 325 for almost 5 hours to 140 in the middle. It was super tender and delicious. I might just have to do another in a couple weeks.

The pasta is so simple you won't believe it.

3 whole eggs beaten
2 cups flour.

There's recipes out there that call for Olive Oli. I've tried them...don't like them. Makes the pasta tough.

If the dough seems dry add water a teaspoon at a time

If  the dough seems wet, add flour a tablespoon at a time.

It should be just past sticky.

I use my Kitchenaid with a dough hook.

Eggs in first
Add flour slowly to combine.
When the dough ball starts to form, knead for 5-10 minutes ( about #4 on the machine.) Might have to scrape the bowl a couple times during the process to combine all the flour etc.

By hand:
Place flour on a surface....counter top, cutting board ....whatever
Make a well in the middle and pour in the beaten eggs
Combine the flour with the eggs until there's a workable dough ball
Knead...knead...and knead some more until the dough is shiny and elastic. Could take 20 minutes of work. Knead, fold in the ends....knead some more. Add flour as needed to keep it from sticking.


Wrap the dough ball in plastic wrap and let it rest for 30 minutes to an hour.

 Cut the ball in quarters and work with one piece at a time leaving the others wrapped up in plastic so they won't dry out.

It's really important. Dry dough is a pasta killer.

Work the piece of dough into a sort of rectangle and start running it through the rollers. You're looking for a sort of square sheet here to work with..

From there it's up to you as to what you want to make.

There's a ton of recipes out there for food processors, by hand etc...etc. in the end it's a mix of experience and what you have to mix with.

Flour is your friend! Keeps stuff from sticking...adds to texture...keeps the "Ball Rolling" so to speak.

Just don't over think it. I've been making pasta for a few years since my Daughter bought me the attachments for my Kitchenaid. I can whip up Garlic, Basil Fettuccine in about 30 minutes. It's awesome.

So....go play in the flour!

Tomorrow I'm going to prep for our New Years Eve dinner. I'ts always just my Bride and I. She loves scallops and Alfredo sauce. We usually have some Angel Hair pasta to go with.

This year I'm making Spinach Agnolatti with a Ricotta/ pesto filling, sea scallops, and my home made Alfredo sauce.

Might even hunt up an angus Fillet Mignon for a side on my Plate. My Bride isn't really a red meat eater.

Best part is....I get to make Agnolatti. There will be some to freeze for sure.

Donna had bariatric surgery back in July.
Carbs are a huge no/no
She has lost about 95 pounds and is very committed.

I should be committed.

During all of this, and because I do the cooking, I’ve lost 45 pounds so far.  My short term goal is another 35 pounds before the cruise in March however it will be really tough.  I’ve only been losing about 1.5-2 pounds a week on average.  But I’m working on it.  And, like the cold temps, it sux.

The pasta is so simple you won't believe it.

3 whole eggs beaten
2 cups flour.

There's recipes out there that call for Olive Oli. I've tried them...don't like them. Makes the pasta tough.

If the dough seems dry add water a teaspoon at a time

If  the dough seems wet, add flour a tablespoon at a time.

It should be just past sticky.

I use my Kitchenaid with a dough hook.

Eggs in first
Add flour slowly to combine.
When the dough ball starts to form, knead for 5-10 minutes ( about #4 on the machine.) Might have to scrape the bowl a couple times during the process to combine all the flour etc.

By hand:
Place flour on a surface....counter top, cutting board ....whatever
Make a well in the middle and pour in the beaten eggs
Combine the flour with the eggs until there's a workable dough ball
Knead...knead...and knead some more until the dough is shiny and elastic. Could take 20 minutes of work. Knead, fold in the ends....knead some more. Add flour as needed to keep it from sticking.


Wrap the dough ball in plastic wrap and let it rest for 30 minutes to an hour.

 Cut the ball in quarters and work with one piece at a time leaving the others wrapped up in plastic so they won't dry out.

It's really important. Dry dough is a pasta killer.

Work the piece of dough into a sort of rectangle and start running it through the rollers. You're looking for a sort of square sheet here to work with..

From there it's up to you as to what you want to make.

There's a ton of recipes out there for food processors, by hand etc...etc. in the end it's a mix of experience and what you have to mix with.

Flour is your friend! Keeps stuff from sticking...adds to texture...keeps the "Ball Rolling" so to speak.

Thanks, RG. I got busy with the holidays and missed this. It will be fun with the grandkids. My Great grandmother ran a small restaurant/bar in Mentor Ohio till she was in her late 80's. She made fresh pasta every day. I remember turning the crank on the machine when i was maybe 6-7 years old when we would visit.. It will be fun seeing my little ones using it too.

Well, since I posted that recipe I've totally changed how I make pasta dough.

I bumped into an enlightening YouTube video by Helen Rennie. She gives very specific measurements and techniques that take the "Feel" process out of the equation.

By weight:
300 grams all purpose or #00 flour
185 grams of egg consisting of 1 whole egg, 2 yolks and enough water to reach 185 g.
1 tsp table salt or 2 tsp Diamond Crystal salt.

Mix dry ingredients in a food processor
Add eggs/water
Process till a dough ball forms ( less than a minute)
Remove all contents to a floured surface and knead for 8-10 minutes.

Let rest  wrapped in plastic for 30 minutes minimum
Cut into 4 sections and roll out one at a time.

It's well worth watching her video. She's a phenomenal cook and very good at making things clear and simple. I find her dough recipe far better than mine. In fact, I made last night's ribbon pasta from it.

Thought I knew what I was doing.....we all can learn something new about cooking. After watching this video, I went out and bought a food processor and digital scale.

I'm headed on a mission today to hit a couple of Asian markets in Henrietta. Still on the hunt for a small carbon steel wok. Everything I've seen has been non-stick coated. That's not going to last. May end up buying it online but I hate the hassle of returning stuff if I decide I don't like it. I'd rather be able to look it over first.

Can't remember where I bought this wok in Rochester it's made by IMUSA and it's cast iron , works great ! And I use a metal wisk in it alot making sauces, just got to keep it oiled when storing

Gave it e serious seasoning on my propane burner....in the garage. A really smoky business. Came out nice. Did an egg test and could almost flip it. Didn't really stick though. Time to put it to use.

Made it to a couple Asian markets this morning. Picked up some cooking wine, fish sauce, wonton and dumpling wrappers and a nice bamboo wok stirrer. Can't believe how inexpensive things were. One store had tons of fresh everything from pork to seafood. There was even a take out kitchen. I'll be going back there.

I had a buddy that wanted some walleye for dinner Friday so I gave him a few lbs of filets, he gave me 50# of these small potatoes!!! I bagged them up to give to family and friends and used some today with Sharp cheese to make 45-50 perogies to share also , That's Alot Of Potatoes!!!

Making cooking sauce. This is one of my favorites for any kind of pasta sauce. This sauce is a Marinara of sorts. Slow cooked and reduced to accommodate additional flavoring and elements. I use a 16quart stock pot and only cook on low to medium low heat.

First I caramelize a whole vidilia onion in a half cup of extra virgin olive oil. It takes 30-45 minutes.

The basic ingredients:
2 28oz cans of...tomato sauce, tomato purée, diced tomatoes, whole Roma tomatoes with juice and 2 large cans of tomato paste. Crush the whole tomatoes and remove any skins you might find. 2 green, and 1 each red, yellow and orange bell peppers chopped (small). Fresh garlic......lots of fresh garlic. I process mine in a small food processor with extra virgin olive oil. Did I say lots of garlic?

Add the seasonings: sea salt, black pepper, red pepper flakes, parsley, oregano, Basil and thyme. I use mostly what I've grown and saved from last summer. Black opal Basil ( flowers) , Greek Oregano, Curley Italian Parsley.....it makes a difference.

My own garlic too. Hard to believe I harvested this at the end of last June.

Anyway, simmer...simmer....simmer until it's reduced by 20% or so. Taste...adjust....add....make it your own. Remember that this is a cooking sauce and you'll  be tossing it in a sauté pan to flavor for the dish at hand.

Once it's finished I put it up in dinner sized servings. I freeze mine...it's just easier than any other storage method I've tried.

I'll be doing a ravioli lasagna in half pans for the potluck. Didn't like the depth of the crockpot and trying to get the raviolis on the plate without destroying them. I'll do one meatless and one meat.

Not really mushy. More dried out and stuck together I'd say. Just hard to dish up without destroying the raviolis. Also, I should have layered in Ricotta or Ricotta/cottage cheese mixture.

Put squirrels in Crock-Pot this morning,browed with bacon onions celery and garlic added some beef consomme' and red pepper flakes to it will let cook slowly all day then make a gravy and put over egg noodles for dinner,smells good already!

ok here we go,now old recipe from mom used lard and grease (real polish cooking)
dough
2 and a 1|4 cup flour
2 eggs
2 tblsp oil
1/4 cup water
1 tsp flour
this is same pasta dough i use for everything mix together and need ,if to wet add little flour if to dry little water
wrap and lt rest i usually do this early
filling
5 lbs of red potatoes or any potatoes (i like skin on) cut and boiled till good and soft in salted water drain and ad little butter and little milk(like mashed but no reel mesurement just your eye not to much)leave potatoes little chunky ,at least i do then ad 2#of shredded cheese and stir in till mixed good i use 1#sharp cheese ans 1#of mild cheeses can use whatever you want
let cool then roll dough on floured surface  and fill and fold over i cut them half moon with tupperware container pinch edge together good and i let them set on a towel for a little bit to dry a little, get pot of water boiling and drop few in ,once they start to float give them about a minute in water stirring gentley remove and shower with little cold water to stop cooking place back on towel to dry(or can be eaten just boiled ) but i melt butter in cast skillet and fry on low with salt pepper and a little garlic powder till lightly browned flipping often thats it!!! i top with hot sauce but also great cooked with onions and mushrooms , this is an old school recipe most done by eye but its very good ,dont think youll be disappointed little time consuming BUT as my mom told me years ago "cooking is a staple of life,not nessasarely to be done fast,but to be done right" best food ive ever eaten has never come from a cook book

Well came out good , wife said venison in them was good but chewy, was right next time I'm gonna smoke a venison roast ,then put in Crock-Pot for a day till fall apart then make filling, lotta work ( not really) this time of year lotta time on my hands , I don't normally order anything on line ,but today orderd  a hand ravioli press can't wait to try it , I have smoked walleye and wanna try a so called seafood raviolis

I use a pastry roller or a cookie cutter both work equally well. I don't really like them after they've been frozen. So, a small batch for a meal is best for us. Biggest thing I've found ( especially for cheese raviolis) is that the filling needs to be dry or they come out mushy. Meat ravs are fairly easy. Cook the meat and drain off excess juices and oils. Cheese....Ricotta....has to be dry. I leave mine in a sieve ,in a bowl, in the fridge overnight. A surprising amount of liquid comes out of it. I also bolster it with dry cheeses like Parmesan, Feta or goat cheese. Gives them more body. I also gave up adding egg. Makes it too creamy. Just a little salt, pepper and nutmeg.

Don't forget the nutmeg!

Walleye ravioli sounds really perfect.

I reorganized my chest freezer and discovered a few bags or perch. Thought about making some perch breakfast sausage. But ,I might make some perch raviolis too.  I would do a coarse grind and dry the ground fish as much as possible. I'd probably add an egg and maybe even a small amount of seasoned bread crumbs to bind the mixture.

My Bride wouldn't eat them...she doesn't like fish much. Sounds good to me though! Maybe drizzled with a nice fish stock Velouté or a cheese Béchamel. Mmmmmmmmmmm!

We did shrimp sautéed in garlic and teriyaki sauce and then tossed in a salad mix quickly to wilt it up a little bit.

I've made almond flour noodles. They were ok......just ok. Losing 45 is no easy task. Great job bud! Several years ago I dropped 32. I've been holding my own since. I generally go up 10 in the winter and down 10 in the summer. Won't be too much longer and I'll be doing my morning march and exercise routine, gardening and such.

The noodles are not bad at all and Carb Quick is WAY better than almond flour.
There's 6 bags of noodles in that order from amazon.
Each bag is easily 2 hearty or 3 decent dinners for two.

The carb quick goes a long way.
If you only made pancakes and waffles with it you would be hard pressed to use it all in a couple months.

Yea, normal noodles and bags of flour are less money, but in the grand scheme of things...………...

BTW, Donna has lost 99 pounds so far.

She loves the gym.

Brachiole got me thinking about a dish I haven't made in quite a while.

Involtini a la Bob! ( it's my own take on an old recipe)
Involtini can be made with many kinds of meats and an infinite number of ingredients. Tonight I used pork filled with mushrooms, asiago, seasoned bread crumbs, garlic, prosciutto and spinach.
I'll skip the particulars ( until you ask)

Basically it's a small version of Brachiole. Spread the filling on the thinned meat and roll up pinning it together with toothpicks. Sauté in olive oil with several cloves of crushed garlic. Brown well and remove. Pull the garlic if it starts to brown. Don't want that bitter garlic taste.

After its nicely browned, remove it and set aside.

Toss the olive oil from the pan and add a good pat of butter with an equal amount of olive oil.
Sauté fine chopped onions and garlic for a minute or two. Add enough flour to make a loose roux and simmer a couple minutes to cook the flour. Then add chicken or beef stock ( I make my own) to the roux to form a nice loose sauce. Taste and adjust seasonings.

Return the Involtini to  the sauce....cover and simmer for  10-15 minutes on low heat.

Remove the involtini and add sliced mushrooms and a chiffonade of spinach, add the involtini back in and simmer for a few minutes till the mushrooms are translucent.

Slice the inovltini.

A little on the rich side for sure Mac. But I balance it out. Breakfast is usually some fat free cottage cheese, OJ and maybe some fruit. Lunch is pretty much always a lettuce and tomato salad with a little oil and vinegar. I have no problem with either of those meals. I don't have time to snack during the day ( unless there's pizza at work.....which isn't often).

We eat dinner early. Usually around 4:30. I guess my biggest sinful treats are some dark chocolate and bourbon. I don't eat cake or doughnuts or ice cream or chips. Even when I make a batch of brownies I only have 1. Over all I'm a pretty conservative eater. I used to be able to sit down and pound a whole strip steak or a couple plates of pasta. I just don't do that any more. Smaller portions are fine with me.

As long as I cook the food, I know what's in it and I can control it. That's why we rarely eat out at restaurants. Lord knows what they put in the food.

I'll be 70 in a few weeks and my Dr. isn't complaining about anything.

It's the lunar new year. A great way to celebrate. I'm doing sesame chicken and maybe a couple egg rolls or dumplings. I'm very close to buying an electric Shabu-Shabu hot pot / grill combo. We've had hot pot a couple times in the past. It's a great way to gather friends and enjoy healthy eating.

Since this is a fishing forum...  Fresh perch, kraft mac n cheese my guilty pleasure, broccoli and sugar snap peas. I tried a new breading and man it was just perfect. Shotgun Red's. Just the right blend of seasonings and texture.

Had some left over beef stew in the freezer. Making some drop biscuits. It'll do for an easy meal.

I do this all the time.
Of course it doesn't get a crust as you would get in an oven but it cooks fine.
Donna's favorite is when I put one in there with sauerkraut over it and a few pierogis on top of the kraut.
The juice from the kraut marinates the pork and steams the pierogi.

Decided to break in the new pot by making some chicken stock for Wonton soup with shrimp and scallops.

I've been working up a recipe for Duck Sauce. The first one I tried was from Foodnetwork or Allrecipes I think. It was just awful. I tinkered with a tiny batch this morning with my notepad and my Bride for a critic. (She's an honest critic). Came up with a pretty tasty mix. It's resting in the fridge for a while. If I can get her to approve, most anyone in the universe will enjoy it too.

If it works out I'll post the recipe.

Ever read what's in that packaged crap Mac? If I can't pronounce it....I generally don't eat it.

We had Wonton soup with shrimp and scallops on rice for dinner. Skipped the egg rolls for tonight. I'll do something tomorrow afternoon for our appetizer.

I'm trying to retrain my Bride's food preferences. Not that she's in bad health or overweight or anything. Just trying to feed her food that will keep her around a long time. I'd be lost without her.

Can't hurt me either👍

Oh...the new sauce pot......⭐️⭐️⭐️⭐️⭐️! I'm very happy with it.

Duck sauce was terrific.

1 tbsp peach jam
I tsp apricot jam
1/2 tsp plum sauce
1/2 tsp light soy sauce
1/2 tsp rice vinegar
1/4 tsp chili paste.

Mix and refrigerate overnight if possible. It will keep in the fridge for about a month.

Also found out how to make the really authentic, sinus cleansing hot mustard some good Chinese restaurants serve.
It's terribly complicated.
Equal parts dry mustard powder and water......that's it! I guess you can add honey or sugar if you like. I prefer to sneeze a couple times.

I have never had pickled fish of any kind.
Does it taste “pickled”?
You know, like dill or sweet?

I may want to try this with Walleye.
We end up with so d**n much Walleye in the freezer every year that Jeff and I always end up doing C&R from about mid to late July on for the rest of the season.

This might mean I’ll have to keep a few more.

It's sort of similar to pickled herring but nowhere near as strong. I've been making this for many years.

It's simple. Brine the fish overnight. Make up the Pickling and jar it up. Keeps in the fridge for about a month I'd guess. Mine doesn't seem to last that long.

The brine is made with kosher or sea salt. Dissolve enough in Luke warm water to float an egg ( a raw egg in the shell).

Chunk up the fish and brine overnight. Some say you should use only distilled water to avoid some sort of mineral taste. I've used that and tap water and can't tell the difference.

Rinse the fish thoroughly and rest in fresh cold water in the fridge while you make the Pickling.

Pickling:
1 c. Cider vinegar
2 c white vinegar
1 c. White wine ( I like Pinot Grigio)
1 c. Sugar
2 tbsp Pickling spices.

Heat the liquids on low and desolve the sugar. Add the Pickling spices and set aside for a couple hours to cool.

Strain the spices.

Layer clean jars with sliced sweet onion and fish. Cover with the Pickling and poke a chopstick or wooden spoon handle into the jar to release the bubbles. Fill the jars to the top , cover and refrigerate. Wait a couple days if you can. I never do.

Oh, only use thoroughly frozen fish to eliminate the extremely slim chance of parasites.

If you've got some walleye in the freezer, try a pint sized jar. The Pickling recipe above will make about 2 1/2 quarts of fish.

The bonus is that the onions are every bit as tasty as the fish.

you did it couple years ago i believe and i made it then and was best recipe ive had
couldnt find it for awhile but wrote it down in my cookbook this time its simple and not overly imposing ,im not a salt fan but this has just enough ,only thing different im gonna try is get a few jalepeno's at store ,split them and heat in brine then strain out with pickling spice for some kick!!!

Don't make he chunks too big or the brines won't penetrate and "cook" the fish properly.

And I do cut the tips off my wings Mac. I either use them for  chicken stock or fry them up separately till they're crunchy.  Sal's Birdland used to do the tips that way. Don't know if they still do.

I do the same thing Bob.
Sometimes I'll collect and save the tips in a plastic bag in my freezer along with backs and other "interesting" parts of the chicken.
I'll collect them until I'm going to make stock or soup and then pull them out of the freezer.

I was only busting about the tips and cutting the wings and drums apart.
It's always easier to do them whole in a smoker or on a grill.
And I know TONS of WNY'ers who leave the tips on to use as a handle for when they are eating them.

Each to their own.
BTW, I prefer Ranch over BC dressing for them.

And believe what or who you want about the origin of the chicken wing.
I heard they unearthed another tomb in Egypt last year with some pickled fish and chicken wings in it.

Try the crispy deep fried tips sometime. I will say I really like the original Buffalo wing sauce about the best. Super simple. Franks Red Hot and Butter. My family likes the Italian dressing version better.

I like my wings slimy and somewhat undercooked.  Unless done on the grill.

My son and I made pork involtini today. Home made pasta and sauce. Great way to spend a day with him....and a great lunch for tomorrow.

its very good size matters just got done putting 6 pints of crappie together,like rg said dosent last long,giving jars out to fishing buddies after it cures in fridge a few days
Definitely going to give a go.  Next pike or pykrul gets the knife.

Tonight it's a tater and ham "lasagna"

I layered taters, ham, spinach and shredded carrots in a casserole with a nice onion garlic bechamel. Oh yeah...and cheese....more cheese and some more cheese..

It's resting on the stovetop. Won't be long now.

and pickled crappie came out great only different i did was the hot pepper and after salt brine"cooking" i didnt put in jars with pickle put fish after washing in a big container with onions and pickle brine for couple days so i can stir and get good absorsion and ill pack n jars again(acctualy had in pints first and didnt look like enough liquid in jar after filling them and using a skewer to get liquid in so went other direction) but it is real good ,probably jar up tommorro
dinner tonight was some of the many perogies i made and froze

your right rg it is great just the way it is,just wanted to ad some heat,i was eating some working on a bridge today in palmyra whole crew loved it with the kick as far as garlic ....na ....dont get me wrong i love garlic but i have found if you dont sweat garlic or heat up really dont ad flavor ,just my finding got to release its oil but fish is great!!!!!!!!!!!

Tonight it was French Pot Roast Chicken.
Browned in olive oil with salt and pepper

Add in potatoes, celery, carrots, a pile of garlic cloves, sprig of rosemary, thyme and a whole sliced lemon.

Cook in Dutch oven at 350 for a couple hours.

How good is it to be able to cook a meal for yourself. I see these stupid commercials for the 20 somethings who can't find their way to the grocery store, buying some internet service that serves them up dinner in a cup.....just pull it from the freezer and toss it in the blender.

Am I wrong... or is this just not right?

Got home this afternoon and made my Bride of 49 years a really nice Valentine's Day meal. Scallops and shrimp with Alfredo and angel hair pasta nests...and a side of asparagus.

my boys are 34 29 and 25 but lucky for me they grew up on all homemade food as i was years ago and they caught the cooking "bug" i guess there always sending me pics of there meals they created the oldest has been allover the world for 8 years thanks to our navy and used to tell me all the foods he ate and said his favorite meat he ever ate was horse ! i know frowned on in our country but said over seas they eat every thing and youngest boy would never even use franks red hot when he lived home but he has lived in austin texas about 5 years now and cooks with all kinds of chili peppers even GHOAST chilis ,those are a bit much for me though

Nah...fresh from the can. Gotta make due. Had a terrible tomato crop last year. Had a blight that left us with just enough eating tomatoes. We did buy a peck or two of plum maters for sauce and salsa. Using the last jar for our nacho platter in a while. Sauce is long gone and replaced. At least I know what's in it.

I'll post the recipe. It's really delicious.

My son is a pretty good cook. My Daughter would just as soon never set foot in a kitchen for the rest of her life. Just the opposite of what I expected.

I'm about to put some pork chops on the Weber......in a little while.

My Bride and I sat out in the sunshine for a little while and enjoyed the warmth and a beverage. Then....the clouds rolled in. Oh well, we'll still enjoy pork chops on the Weber, rice and home grown wax beans ( frozen).

Nope Rd venison is better than all other meats , just has to be made right ,my wife wouldn't touch venison when we first met till I made it for her ,said every other time she had it was dry and not good,same as fish wouldn't eat it cause said she had "fish sticks" every Friday from her mom haha loves it now ,drives boat when trolling,good at jigging and a good Hunter now so people can be swayed

Last corned beef I cooked was in the smoker at least a year ago. My Bride isn't a big fan or I'd do some for my birthday on the 16th.
