Are they whole or fillet?
A good one for fillet
-Coat baking pan with olive oil
-put down fillets skin side down.
-put on salt, pepper, garlic, couple slices of butter, parsley, little lemon, splash of white wine (if you have it)
-bake at 350 till flaky. about 20 min
I also like wrapping them up in foil, less mess and the juices get into the meat better. But if you can fill the baking dish good it doesn't matter. Usually take them out and lay out on a plate and dump the juices over the top.
