That's side pork. I bought it at store.. it's off a pig from the local fair..
After mixing up brine it soaked for minimum 5 days.. this batch I soaked for 9 days and then smoked at 170° for 7 hrs it reached 155°.. I move into my cooler to cool down quickly and hang in cooler overnight.. easy to slice up when its chilled
Honestly.. Better than ANY store bought bacon I've ever had

When I dont have the big walk in cooler running ( the off season) I utilize this double door cooler I bought YEARS ago!!!

Bacon brine
1/2 cup maple syrup
1/2 tsp pink salt
4 1/2 tsp course kosher salt
3/4 cup water
3 tbsp brown sugar
4 1/2 tsp black pepper
I put side pork in a gallon bag if I can.. dump brine in and then flip bag every day for duration of soak time
Rinse off real good and hang in cooler overnight to dry before you smoke
As long as you wash off good it will not be salty bacon at all but itll be cured perfect

If only I lived closer to you or vise versa. By all means you sir are an animal at this type of work but I also know your "helper" situation and wish I could be that dude to maximize your production.... without babysitting.

That bacon will last us a few months... my kids and I LOVE bacon though.. lol

That my friend would be awesome!!!!!
Both guys are coming back this year.. I am hopeful that they will both be faster and more efficient with a season under their belt

Just got smoked walleye out of smoker to use in chowder or dips ( if it makes it that long ) not a fan of salt so used minimal and leaned more to brown sugar and honey , very good if I do say so myself haha

people around here would freek out about smoking eyes. lmao  they look good man :thumbup_smilie: catfish fillets(small flatheads are best) work good in the smoker too.  I have smoked gills and bass whole and split but not fillets.  pike fillets aare another good one for smoker.  I do them on foil with lots butter about an hour.  I swear I can eat an 8pound pike all myself.  :P
