Nice work John as usual. What was the marinade? Teriyaki is what I made.

Honey crisp apples stuffed with brown sugar, cinnamon and butter.



They've been in at 250 for about 3 hours. Pretty tender at this point. After they cool a bit, I'll post a result.

RG, glad to hear you are back smoking. Water does funny stuff to things at times.
I just put 27 pounds of loin in the cure to make Canadian bacon in 10 days. This is a great time of year to make smoked goodies.

I'm loving it DS! The apples were good, but could have cooked longer and at a higher temp. Actually, they'd probably be better on the Weber.

Fishjohn has me thinking corned beef brisket this weekend.  :w00t: :w00t: I've done a few in the past with a recipe that calls for smoke on the rack.....cover in a pan with a liquid mix, then finish on the rack. I like his method better. Way less complicated.

Rg...  I gave what we didnt eat that night to my parents..(they have temp custody of my sisters kids) so whatever extra food they can get they take to help with grocery bill..
Anyways.. they killed it and said it was great!!!

Ran 16 pounds of x-sharp cheddar through some cherry wood smoke this morning. Did some yellow and white cheese because my grandson says yellow tastes better. His dad like the white. As far as I'm concerned, cheese is cheese.


Vac sealed and ready for a couple month nap.


Going to pick up another 20 pounds next payday to do for next summer.

Thanks John. I picked up a small flat today. Just 3 lbs or so. It's just my Bride and me so we don't need a lot. I have the rub you used in my collection. Also picked up a couple pounds of center cut bacon to smoke up some pig candy.

I'll smoke up the last of my Cayenne and Firecracker chilis too.

Well, my cardiologist isn't gonna get a sample, so I'm probably ok. A lot of that fat wil render away anyhow.

The brisket is Soaking in some cold water right now to get some of the salt out. Getting the bacon ready to make "pig candy"

He won't get any of that either.

Well.....the damned smoker quit again. No idea why. 2/3 of the way through the "pig candy" cook with a corned beef flat in waiting.

So, I dropped back 20 and punted. The bacon was finished off in the oven at 350 and while not the same texture as the last batch from the smoker, it's still crazy delicious. The brisket is in the oven now at around 225 and has hours to go.

The best I could do under the circumstances.

Tomorrow I'm going to swap controls with my neighbor's unit to see if it's the electronics or not. He bought the same smoker I did. I could have used his to do the cook, but I was quite frustrated and  ready for a beer and the couch.

I'm sure it'll turn out ok anyway.
