Started smoking the Christmas ham today. Instead of using the old  homemade smoker I've used for years, I thought I'd try it in the CharGrill this year. Figured what the heck, the worst I can do is ..... make ham!

I cut a piece of 6" stove pipe to fit standing up in the burn chamber, filled it with 2"-3" pieces of corn cob (about a dozen), lit the bottom and shut down the dampers so the cobs just smolder. One dose seems to smoke for about 3 hrs. with almost no heat in the smoking chamber, which is exactly what I want.





I'll give the ham 2 smokings  a day for the next four days, let it "rest" a day, and bake it Christmas morning. There's nothing like cob smoked ham!  ;D
     One more with the one we're after and we'll have two.

Great looking ham fishnmachine. It's hard to beat smoked goods. I did another double smoked ham for Christmas at my daughter's. She doesn't like smoked foods, but after trying a ham I did a couple days before, she wanted it again.
Take a cheap shank end ham and trim most of the fat from it.

Score the ham horizontally about a half inch deep at an angle to catch the juices and glaze. I then started the smoke generator ( I'm using a home built electric smoker).





Put the ham in the smoker with the pan of fat with holes poked in the bottom directly over the ham to baste it as it cooks.


I cooked it at 225 degrees with pecan wood untill the internal temp hit 144. The 11.5 pound ham took 6 hours. About an hour before it is finished, slather it with the glaze.
1/2 cup Brown sugar
1/3 cup real maple syrup
1/2 t ground mustard
1/4 t cinnamon
1/8 t ground ginger
1/8 t ground cloves
1/8 t ground nutmeg
Warm in microwave and stir till sugar is dissolved.

Newly applied glaze.

I tried a new recipe for New Year's eve nibbles at camp.
Smoked bacon wrapped onion rings.
Cut large white onions into 1/2" thick slices. Separate rings a couple layers thick. Mix your favorite BBQ rub with BBQ sauce and dab on the rings.


Wrap with thin sliced bacon and sprinkle with more rub.


I also did up some bacon wrapped venison backstrap bites and some Atomic Buffalo Turds ( cheese stuffed bacon wrapped jalapeno peppers).
Cooked at 250 degrees with pecan wood for around 3 hours













Delicious!
