Just put 6 large chisken brests into the pellet smoker for dinner.
It's 20 out so that thing will probably gobble up the pellets to hold temp.
Pics later when I pull them out.

I'm doing them in a foil roasting pan because I don't want to be faced with the mess and cleanup in thse temps later.
I know they will sit in thier juices and grease, but...........
Being breast meat, and the fact I pulled off the skin to get better smoke penetration, I'm hoping there will be less grease in the bottom.
Hoping anyway.
I have to get a large rack for these times when I do this.
Using the pan really saves the cleanup work.

Mac, I found these at Wal-Mart in the BBQ section last fall. [email protected] They are around 12x18". There is plenty of room under the grate for smoke to circulate. They have been great to use. All the drippings are caught.

I have one of those and use it all the time. Bought it to make pizza on the outdoor griddle and have found a dozen other uses for it indoors. Great for setting breaded foods like fish and chicken before cooking.

Donna has a few racks like that she used for cooling cookies and baked things like Bob mentioned.  She would cut off my jimmies if I used them.   ;)

I went on Amazon to “window” shop last night and see you can get tons of sizes.  I’m going to maybe try to find 2 square ones that fit my smaller square foil trays and then maybe they would both fit in the larger rectangular ones.

Brine it!!!!

Yea, ours was good, but drier than I would have liked.
I should have brined it.
All poultry benefits HUGE from brining.
We never roast a turkey anymore without first brining.
And I generally will do it for 2 days!!!

This is especially true for boneless and skinless breastmeat.
The bones add moisture and flavor and the skin helps hold in the moisture.
However, the skin inhibits smoke penetration.
Soooo.....................brine it!

Also, smoke it heavy very low in temp for a bit to get the smoke penetration.
Then tent it.
Finish in a pan with a little liquid like chicken stock - but cover the pan with foil.
