Brine is great for all poultry as Mac said. It definitely helps
 Also, the classic cover with a few slices of bacon works too.

they hit it on the head with brine. any lean meat benefits from a brine.  deer is awesome brined!  the roasts come out like roast beef.

temp also makes a huge difference in a moist bird.  dig. probe with alarm is only 20 bucks and well worth it!

I bought this one and love it.
4 probes and bluetooth.
Allows me to monitor from my phone inside the house during winter instead of contantly going outside and OPENING IT UP!!!!
If you're lookin you aint cookin.

Has alarms too - so I can set it for 5 or 10 degrees before it's time to pull things out.
Or maybe set it for 20-25 degrees before so I can baste or paint with BBQ sauce or something.

I helped a friend out a few years ago. He wanted me to really get into smoking so to thank me for helping him, he got me a Thermoworks Smoke thermometer system. 2 probes, one for meat one for smoker temp. Has a wireless handset with a range of 500í. Really made smoking easy

Got 2 racks on the Pitt Boss pellet smoker for a dinner at my sisterís tomorrow.
They still have 4-5 hrs left to go but I took a peek.

Tomorrow Iíll spritz them with some apple juice, cover them and warm them at 250 for 45-60 minutes.
