Had my neighbor over for dinner. He doesn’t have any family around and he’s a good friend. Ham, mashed potato casserole and green bean casserole.
Jojo the parrot had some ham, sunflower seeds and walnuts.
Enjoyed a video gathering with our Daughter and her family. We opened presents together and got through the day in the best way we could. Not the same but, we’re all safe and healthy.
Sipping a wee dram of Evan Williams Single Barrel and munching a Ferraro Rocher or two.
All in all a very pleasant day.

Minestrone in my new Dutch oven.
Brown the hot Italian sausage
Remove the sausage and drain in a bowl with paper towel. Drain the fat from the pot and add in the garlic, onion, potato, carrots and celery
Add in some chicken broth and deglaze the pot. Bring the heat to high and sweat the veggies adding broth as you go. Add in your seasonings...basil, oregano, parsley black pepper. Add the salt later to taste.
Add the sausage, a can of drained and rinsed beans ( cannellini beans today) and a can of diced tomatoes. I’m using fire roasted garlic tomatoes.
Add in a good pile of fresh spinach, a tablespoon of butter and a happy handful of some kind of pasta. Ancini de Pepe today
Bring it to a boil and reduce to simmer for a couple hours ...or more if you like.
There’s a loaf of bread rising to be made later today.
I’m already emotionally attached to this Dutch oven. It’s a beautiful thing!

Roasting a turkey today
It’s been brining for almost 2 days so it should be great.
Was going to smoke it but decided to do it inside when I saw the weather this morning.

Yes it does look good , got up early and cut and packaged the rest of the spiral ham , and took care of the dishes , how the heck can 2 people make such a mess 😜
Hopefully be heading somewhere to drill holes in the ice , if the snow monster doesn’t get in the way ,
