Taking a quick break from canning the 3 nice does hanging in the shed this morning 
They were on the move before the front last night.

Tom, That brings back some memories!  After watching my Mother and then another elderly lady friend of the family(both of whom have passed on) can much deer meat, I decided to try and can some a few years ago.  Well, I didn't pack the jars (quart) and wound up with 1/2 filled jars with some of the meat sticking up above the liquid.  It was ok to eat but I used it up fairly fast ...wasn't sure how it would keep like that...another lesson learned...why do these things always happen to me!? LOL!  We usually just added a little salt and a couple of cloves of garlic but I like your mex recipe and will try it this year.  I may try pint jars also as you can pack a lot of meat into those quarts.  Thanks for sharing!

well i have to be honest with the canned deer thing..... I'm in a hunting camp with some old timers who do it and have prepaired it with sitting over a year and its wonderful!!!!!
