well i have to be honest with the canned deer thing..... I'm in a hunting camp with some old timers who do it and have prepaired it with sitting over a year and its wonderful!!!!!
Oh yes, done correctly, it will keep for several years.  I didn't pack the jars (quart) tightly so the meat settled to about half a jar or less when done...some of the meat was above the broth line.  Didn't know if that would affect the meat over a long period of time??? so we used it up rather quickly.

I used to can venison a lot... then got too busy with kids, etc... The jars I used I've had a long time. I've always kept enough jars in the attic to can whatever meat I have in the freezer, in case there's no power. I was without power for almost 2 weeks after the Labor day storm years back. Fortunately, I had family & friends that took & kept my meat from going bad, but it got me thinking about what would happen if we were ALL without power for a few days or a week. I decided I'd rather spend the time canning the food I have in that situation than slowly watch it rot & put everything I needed to do so in the attic (with instructions taped on top, in case I wasn't there, the kids or someone could do it, if they chose to.) If we have a bad situation come down, I want to be the LAST person they show on TV b!t(hin' about how the "gub'mint" didn't come save my butt quickly & comfortably enough. I tried canning a batch of pints of some of the perch we've gotten lately... GOOD stuff... Mix it with mayo, horseradish mustard, minced onion & a little pepper... killer sammies!  8)

I didn't think hippies killed turkeys!!?? :w00t: :w00t: :flag:
At this point I do not want anything made from turkey, I think I ate like 5 pounds of it myself in the last week. No more ham either, I need something else, leftovers are great, but I need a fish dinner or a steak today.

You'll do better at dusk & after... there should be fish in shallow in that area by now but I haven't been over that way. You could try casting off of Oneida shores park in that area too.

all those areas are not doing anything, but hey you never know. they are for sure not going to tell you to fish the north shore, that is owned by the N.S.T...............actually they wish. so try oneida shores, north and south fishing access @ the Route 81 bridge and good luck!
