I let them simmer for about 45 minutes in some stock with veggies.
Then I picked them clean and ate it over rice.
The kids thought it was chicken. It is excellent meat.

the young ones i fry up like chicken. the older tough ones boil and remove the meat, make pulled pork. use your favorite recipe used to get 100+ a year all with .22

Got a crockpot of vennie stew going now.
Picked up fresh bread and donuts at the frendly bake shop this morning when i went down to get the paper...
Cant fish today so i might as well cook..

Finally reached temp, slow process at 11:15 pm tonight, showering with cool water now to stabilize temp and stop smoking process ,then hang in cooler till tomorrow
