There is not realy a season for BBQ and smoking meat, it's a year round thing, but I never reamember to takes pics as I go . I will try to keep up this year
Tonight I will start if off with a beer Can chicken..
This is halfway thru the gooking process, I use plenty of run and let the skin get crispy...
Once the chicken has about 30 mins left in the cooking cycle, i start to lather on the BBQ sauce, usually three good coats

That looks very good. I had the same idea and making mine this week. I have never thought about putting BBQ sauce on, but i think I will try it this year. I see that you put yours in a pan. Do you put anything in the pan or is it just for drippings? I usually just set mine right on the grill with out a pan.

I use that pan just to collect drippings and for ease of clean up. I do have anothernpan I use to cook potatoes with the chicken

My Job this past Easter weekend was the cornbeef brisket, so I packed up the smoker and brought it with me

made it to the butcher just in time after work to grab the last two Prime Rib cut steaks. I love the prime rib cut almost more then a T-Bone. add some BBQ roasted potatoes and some asparagus and you can go wrong
mmm look at those juices on the plate
tried a new steak sauce as well, and was very impressed..

No, this was straight off the grill no smoker this weekend, and the sauce was Rufus Teagues Meat Sauce, it was new on the butchers shelf and he threw it in for free so i could give him my opinon (Im a good customer, wich just means I spend alot)

I hit the butcher shop this afternoon and noticed the beef ribs where back in stock...I asked the Butcher (nicely) to risk his finger tips and cut me up some short ribs, I noticed a new sauce on the self while I waited and dinner prep was complete
the butcher did a nice job..here is the untouched short ribs
time for a rub down with a secret blend
next up is some manditory grill marks
then the first layer of sauce
a few minutes later we have the finished product
